The key flavours are coming from a beautiful balance of garlic, ginger, black mustard, fenugreek, turmeric and chilli, but not to forget the Madras mix, cardamom, fennel and coriander. Only an expert could successfully layer up this many aromatics! With a splash of coconut cream and cashew nuts, this curry will not disappoint.
