Mexican Recipes: Easy Peasy Guacamole! + Quick Corn Salad

Both these Mexican side dishes are the perfect accompaniement to our family meals, Chicken + Capsicum Fajitas with Green Harissa Sauce or Beef + Corn Enchiladas which will feed 4-6 people. Any leftovers can be thrown together in a wrap and enjoyed for lunch the next day!

Easy Peasy Guacamole!

  • 1 avocado
  • 1tbs sour cream - optional
  • Lemon juice to taste
  • Tabasco sauce to taste
  • Salt & pepper
  1. Mash avocado with fork.
  2. Add remaining ingredients to blend with avocado.

Quick Corn Salad

  • 4 corn cobs
  • 1 tablespoon lime juice
  • ½ Spanish onion, finely sliced
  • ½ green capsicum, finely sliced
  • ½ bunch coriander (more or less, according to your preference)
  • Lime wedges to serve
  1. Cook corn cobs in boiling water until tender.
  2. Cut kernels off the corn and mix with sea salt, pepper and lime juice. Set aside to cool.
  3. Just before serving add onion, capsicum and coriander and toss to combine.
  4. Serve with lime wedges.
