The following guide has been put together as a one-stop reference for all items on our Christmas/Entertaining Menu. Its purpose is to make storing, preparing and serving our Christmas food 100% foolproof, so you can get on with the business of enjoying yourself! This guide will tell you:
- what the item is
- how the product arrives to you (frozen/fresh, cooked/uncooked)
- how to store it how to serve it (hot/cold)
- what to serve it with
- how long it will last
Check through the categories for the specific items you’ve ordered. This will not only save you time and stress on Christmas day but will also ensure you get the very best, most delicious result! Note: Every item does carry a label with instructions on it.

Entrees
Vodka cured gravlax [salmon] (GF)
Serves 4
House made and hand sliced gravlax.
Serve with bread, lemon and sliced cucumber or Citrus Aioli (not included).
Product is delivered frozen. 3 months use by date. Once defrosted use within 5 days.
Defrost in fridge overnight. Remove packaging & transfer to individual plates.
Australian tiger prawns (GF)
Serves 4-6
1kg of fresh prawns
Serve chilled with Citrus Aioli (not included).
Product is delivered frozen. 3 months use by date. Once defrosted use within 3 days.
Defrost in fridge overnight.
Tip: Roll prawns (peeled or unpeeled) in paper towel to remove excess moisture.
Trio of dips with flat bread
Serves 4-6
Hummus, Roast capsicum, Chunky pesto + flat bread.
Product is delivered frozen. 6 months use by date.
Defrost in fridge overnight. Dry fry or oven warm the flat bread to serve.
Tomato + goats cheese tarts
Serves 4
Product is delivered frozen. Heat for 10 minutes in preheated 180c oven.
Turkey
1.5kg Turkey breast - raw rolled
Serves 6-8
Fresh, raw, free range boneless turkey breast.
Product is delivered fresh in a vacuum sealed Cryovac bag. Use within 10 days. Store in fridge.
Allow turkey to come to room temperature for 1 hour prior to cooking, then remove packaging, leaving the netting in place. Transfer to a baking dish, pour over 1 cup of white wine (or stock / water). Place in pre-heated fan forced 180c oven. Bake for 75 minutes, rest for 10 minutes. Cooking time may vary depending on oven. Remove netting before carving and serving.
1.25kg Turkey Breast - cooked
Serves 6-8
The turkey is delivered freshly cooked and sealed in a vacuum sealed bag. Fresh, unopned use within 8 days. Once opened consume within 4 days. Store in fridge.
Allow turkey to come to room temperature for 1 hour prior to heating or serving. If heating, then remove packaging and netting. Slice and lay on a greased oven tray. Cover with foil and place in pre-heated fan forced 160c oven 15 minutes, until warm. Alternatively heat gravy and pour oven turkey and heat as above..
1/2kg cooked, sliced turkey breast – (GF)
Serves 4-5
Cooked fresh, free range boneless turkey breast. Allow to come to room temperature before heating. Cut a corner of plastic bag. To heat microwave on high for approx. 1.5 minutes based on 900 watt microwave. Check to see if hot enough and reheat longer if required.
Product is delivered fresh in a vacuum sealed Cryovac bag. Use within 8 days. Store in fridge.
Ham
Ham and turkey pack
Serves 6-8
Sliced premium 1/2kg of each double smoked leg ham and turkey breast served with 3 condiments (Dijon mustard, Cranberry chutney + Citrus aioli).
Product is delivered fresh and ready to serve. Unopened use by 10 days. Once cooked consume within 4 days. Store in fridge.
½ kg sliced ham
Serves 4-5
Sliced double smoked leg ham.
Product is delivered fresh and ready to serve. Unopened use by 10 days. Once cooked consume within 4 days. Store in fridge..
5kg Double Smoked Leg Ham
Australian premium double smoked leg ham.
Product is delivered fresh in a vacuum sealed bag. Use within 2 weeks.
Remove packaging. To take the skin off the ham, cut around the edge between the skin and the fat. Carve and slice as required.
To store, place in a damp ham bag or tea towel in the fridge.
5kg Glazed Ham, ready to bake
Ham + container of lip smacking fig glaze. Ham is delivered fresh in a vacuum sealed Cryovac bag. Cook within 10 days.
Remove packaging. Place ham in large baking dish and pour over glaze. Bake in pre-heated 180c oven for 1 hour. Baste every 15 minutes.
To store, place in a damp ham bag or tea towel in the fridge for up to 2 weeks.
5kg Glazed Ham
Ham marinaded in fig jam + apple glaze.
Product is delivered fresh, already baked and ready to carve and serve or re-heat. Use within 2 weeks.
To store, place in a damp ham bag or tea towel in the fridge.
Seafood
Australian Tiger Prawns (GF)
Serves 4-6
1kg of fresh prawns
Product is delivered frozen. 6 months use by date. Once defrosted use within 3 days.
Defrost in fridge overnight. Use paper towel to remove any excess moisture.
Half Side of Salmon w Walnut + Parmesan Crust - ready to cook
Serves 4-6
600gm (half side) salmon fillet.
Product is delivered frozen.
Defrost overnight in fridge. Bring fish to room temperature 30 minutes before cooking. Place on baking paper on oven tray. Bake in pre-heated 200c oven for 15 minutes. Check fish at this stage. Cook longer if required but please remember the fish will keep cooking when removed from oven. Allow to rest for 5-10 minutes before serving. transfer to serving platter using baking paper. Use an egg slice to lift one end of the salmon and gently pull the baking paper from under the fish.
Chicken/Duck/Lamb/Pork
Porchetta w Apricot + Macadamia Stuffing - ready to cook
Defrost porchetta uncovered in fridge for 24 hours and ensure it is completely dry. Massage a generous amount of olive oil + salt into the skin.
Place on wire rack in roasting pan. Add a splash of water to the base of the pan. Roast in preheated 240c oven for 25-30 mins. Reduce temperature to 170c then roast for a further 45 minutes. Allow to rest uncovered for 20 minutes.
Remove the trussing string and slice into 2cm rounds.
1.4kg Piri Piri Whole Butterflied Chicken - ready to cook (GF)
Serves 4-6
Whole raw chicken, butterflied, marinaded, ready to bake or barbeque
Product is delivered frozen. 6 months use by date.
Place in preheated 180c oven for approx. 40 mins. Allow to rest 10 mins before carving/serving. Cooking times may vary depending on oven. BBQ over medium coals.
Confit Duck w/ Pear & Orange Jus (GF)
Serves 2
Slow cooked duck maryland in traditional French fashion.
Product is delivered frozen in a vacuum sealed Cryovac bag. 6 months use by date
Defrost overnight, remove packaging, place duck on oven tray, along with all the jus and reheat in preheated 200c oven for 12-14 minutes.
Tandoori Chicken Skewers - ready to cook
Serves 2
6 chicken tenderloins on skewers with house made tandoori marinade.
Product is delivered frozen. 6 months use by date
Defrost overnight in fridge. Not suitable to defrost or cook in microwave. BBQ over medium coals, grill or pan fry for approx. 2-3 minutes each side. Allow to rest before serving.
Chicken Skewers with Satay Sauce - ready to cook
Serves 2
6 chicken tenderloins on skewers with house made marinade and side of delicious peanut sauce.
Product is delivered frozen. 6 months use by date
Defrost overnight in fridge. Not suitable to defrost or cook in microwave. BBQ over medium coals, grill or pan fry for approx. 2-3 minutes each side. Allow to rest before serving. Warm peanut sauce in microwave and serve with crisp Asian Salad
Lamb Souvlaki Skewers - ready to cook (GF)
Serves 2-3
6 x 100 gram lamb skewers with house made marinade of lemon, garlic + olive oil marinade.
Product is delivered frozen. 6 months use by date
Defrost in fridge overnight. Bring the meat to room temperature 30 minutes before cooking. BBQ over medium coals for 2 minutes each side. Alternatively, heat a little oil in a fry pan and fry lamb skewers for 3-4 minutes. Rest in pan before serving. Pour pan juices over to serve. Serve with mint/lemon/cucumuber yoghurt.
Salads and Sides
Christmas Crunch Salad (GF) - add your own greens
Serves 4-6
Product is delivered frozen. Just add 120g from salad greens, toss all ingredients together with dressing.
Use within 3 months.
Greek Salad - add your own greens
Serves 4-6
Product is delivered frozen. Just add 300g each of diced ripe cherry tomatoes and cucumber along with ½ red onion, toss all ingredients together with dressing.
Use within 3 months.
Moroccan Couscous Salad w Harissa Dressing
Serves 4-6
Product is delivered frozen. Use within 6 months. When ready to serve, warm couscous and toss all ingredients together with dressing.
Roast Vegetable w Garlic (GF)
Serves 6
Product is delivered frozen. Use within 3 months. Defrost in fridge before heating in pre-heated 200c oven for 20 minutes to crisp up the vegetables.
Orange, Almond + Herb Stuffing
Serves 4-6
Product is delivered frozen. Use within 3 months. Defrost in fridge before heating in pre-heated 180c oven for 20 minutes.
Onion + Sage Stuffing (GF)
Serves 4-6
Product is delivered frozen. Use within 3 months. Defrost in fridge before heating in pre-heated 180c oven for 20 minutes.
Citrus Aioli (GF)
Serves 6-8
Serve with prawns or any other fish, chicken or beef.
Product is delivered fresh. Use within 3 months.
Cranberry Chutney (GF)
Serves 8
Serve chilled with any cold meats, turkey, chicken etc.
Product is delivered fresh. 3 months use by date.
Traditional Gravy (GF)
Serves 8
Product is delivered frozen. 3 months use-by date. Defrost in microwave for approx. 15 minutes. Heat on high for a further 3-4 minutes. Remove lid and whisk until smooth. Take care, hot liquid. Alternatively, add to pan juices (if roasting meats) and stir to combine.
Lemon + Thyme Jus (GF)
Serves 6-8
Product is delivered frozen. 6 months use-by date. Defrost naturally and gently heat on stove and swisk until smooth. Alternatively, add to pan juices (if roasting meats) and stir to combine.
Double roasted herb potatoes
Comes in two sizes - Serves 2 or 8.
Product is delivered frozen. Use within 3 months.
Transfer to oven tray and heat at 200c for 12 minutes.
Sourdough Bread
Serves 6-8
Product is delivered frozen. Store frozen and defrost on bench 1 hour before. Bake at 180c for 10 minutes.
Desserts
Christmas Pudding
Serves 8
Product is delivered fresh. Use within 3 months
To heat, place in microwave on medium heat for 4 minutes.
Brandy Sauce
Serves 8
Product is delivered fresh. Use within 6 months.
Heat in saucepan until warm.
Mince Pies
Serves 6
Product is delivered fresh. Use within 4 weeks.
Warm in pre heated oven 180c for 5 minutes.
Chocolate Fondant
Serves 2
Product is delivered frozen. Bake in pre heated 180c oven for 15 minutes from frozen.
Lemon tart (GF)
Serves 4
Product is delivered frozen. Take out of freezer 15 minutes prior to serving.
Salted Caramel Tarts (GF)
Serves 4
